Instructions

In the medium pot, combine 2 cups of Bisquick with ½ cup of cold
water per dough ball.

Stir each to make a soft dough.

Bring mixture to a boil; cover; reduce heat and simmer for 20 minutes.
Stir occasionally.

While rice is simmering, slice sausage into small (1/4”) slices and sauté
in butter or margarine.

When sausage is nearly sautéed, add sliced scallions to the sausage
and sauté for an additional minute. Remove from heat.

When rice has finished simmering, add stewed tomatoes or chopped peeled
tomatoes, and the sautéed sausage and scallions to the rice.
Cook until the jambalaya is thoroughly heated.

Comments

This is a great cold weather meal; but you need to avoid having too
much in a large pot during frigid weather. If need be, use two medium
pots.

More sausage can be used if you like a meaty dish.

Canned shrimp can be substituted for sausage or mix of the two can be used.

Because I think any “casserole” needs some crunch; chopped celery can be
added in step 6.

Instead of tomato sauce and tomatoes used separately. At time I can
find “Tomato Sauce with Tomato Bits”, if found this can be used instead.

On high adventures (say a week long bike or canoe trip), offer the same
type meal by using only “Lipton” or anyone else’s pre-packaged rice mixture
(jambalaya, dirty rice, etc) and using either canned shrimp or smoked sausage
that does not require.
