JAMBALAYA

Food Needs  (Serves 8 Scouts)
2 Cups of Rice (not minute rice)
1/3 *tsp Ground Red Pepper
1 *tsp Ground Black Pepper
1/2 *tsp Garlic Powder
1/2 *tsp Dried Thyme
2 *Tbs Dried Onion Flakes
2 *Tbs Dried Green Pepper Flakes
2 *Tbs Dried Parsley Flakes
2 Beef Bullion Cubes (crumbled)
4 Cups of Water
1 1 Pound (16 Oz) Can of Tomato Sauce 
2 Pound of High Quality Andouille or other Smoked Sausage
2 Scallions (sliced thinly) 
Margarine or Butter 
1 8 Oz Can of Peeled Tomatoes (drained) or 8 Oz Can of Stewed Tomatoes 
* Premix in plastic bag from home 
 Equipment Needs
1 Stove or fire
1 Dutch Oven or Large Pot with Lid
1 Hot Gloves
1 Large Spoon
1 Can opener
1 Frying Pan
1 Spatulas
1 Sharp Chopping Knife
Aluminum foil for chopping surface and to
cover the Dutch Oven
Instructions
1 If Dutch Oven is being used, pre-heat Dutch Oven.
2 Combine the water, tomato sauce, rice, spices, and bullion cubes in a Dutch Oven or large pot.
3 Bring mixture to a boil; cover; reduce heat and simmer for 20 minutes.  Stir occasionally.
4 While rice is simmering, slice sausage into small (1/4”) slices and sauté in butter or margarine.
5 When sausage is nearly sautéed, add sliced scallions to the sausage and sauté for an additional minute.  Remove from heat.
6 When rice has finished simmering, add stewed tomatoes or chopped peeled tomatoes, and the sautéed sausage and scallions to the rice.  Cook until the jambalaya is thoroughly heated.
 
Comments
1 This is a great cold weather meal;  but you need to avoid having too much in a large pot during frigid weather.  If need be, use two medium pots.
2 More sausage can be used if you like a meaty dish.
3 Canned shrimp can be substituted for sausage or mix of the two can be used.
4 Because I think any “casserole” needs some crunch; chopped celery can be added in step 6.
5 Instead of tomato sauce and tomatoes used separately.  At time I can find “Tomato Sauce with Tomato Bits”, if found this can be used instead.
6 On high adventures (say a week long bike or canoe trip), offer the same type meal by using only “Lipton” or anyone else’s pre-packaged rice mixture (jambalaya, dirty rice, etc) and using either canned shrimp or smoked sausage that does not require.
